Hunkahubby's Laughing Linguini & Scallops

I love my husband (Hunkahubby). Not only does he stay home and take care of the kids, he cleans, he decorates, he's GORGEOUS . . . and he COOKS. And he must have known what a food rut I've been in lately - because he got creative and made me a new healthy dish tonight. He gave me permission to share it here - so I hope you enjoy it as much as I did!!

Laughing Linguine & Scallops
Creation by Hunkahubby

1 tsp olive oil
2 cloves garlic - minced
1 tsp onion - minced
1 Roma tomato (chopped)
1 summer squash (sliced)
1 zucchini squash (sliced)
4-6 oz. scallops
2 wedges Laughing Cow Cheese - Garlic & Herb
Basil (to taste)
Oregano (to taste)
Lemon Juice (to taste)
2-4 servings (2 oz. per serving) of Ronzoni Whole Wheat Linguine

Boil linguine per package directions
Combine olive oil, garlic, herbs, and onions in sauté pan
Sauté scallops and squash (both kinds) over Medium High heat
Add mushrooms and cheese wedges, stir until cheese has melted
Add tomatoes and lemon juice, more herbs to taste if desired

Drain linguine.
Serve sautéed mixture over linguine.

Let me tell you - this is YUMMY. And depending on how many scallops and how much pasta you use - this awesome recipe is only 3-5 Points per serving. Woohoo!!!
